How to Shuck (open) an Oyster

Tools for the job:

  • A good quality Oyster knife or heavy duty blunt knife
  • Heavy gloves or a specialist oyster glove
  • Seafood or Oyster forks for serving
  • A bowl of fresh Oysters purchased from a local seafood specialist

There are four main steps to safely opening an oyster.

Step 1:

Brush or scrub the oysters under as running tap to clean away any loose dirt or seaweed that may be attached to the shell. Take the oyster and grip firmly in a gloved hand. Using the tip of the knife, insert the blade of the oyster knife in the natural join between the top and bottom shell, close to the hinge at the back of the oyster.

Rock the blade gently back and forth until there is enough room to twist the blade.

Step 2:
To open the hinge further place some force behind the blade (be careful at this point as this is when you are most likely to slip and cut your hand) and twist firmly.

Step 3:
Once the hinge has been split, whilst holding the oyster level to avoid any of the 'juice' being split, slide the blade of the oyster knife round the
rest of the oyster and using a twisting motion seperate the top and bottom shells.

Step 4:
There is only one muscle that holds the body of the oyster to the shell, which can be easily cut with a knife.

Ideally serve the opened oysters on a bed of crushed ice to keep them fresh. You can flavour them with lemon wedges or my favourite is a little Tabasco sauce and either pick out with Oyster forks or scoop the contents, with the 'juice', straight into your mouth.
