About Stellar Sabatier Knives
The Stellar combination of Carbon-Chrome-Molybdenum & Vanadium Steel offers the advantages of easy sharpening with extended edge life and resistance to rust & stains.
Each Blade is fully forged from a single billet of top grade steel - not Strip Steel. Blades have a full length 'tang' which entends into the handle. The craftsman-ground edges will retain their sharpness through expert hardening and tempering. The perfect Taper Grinding of Stellar blades produces a fine and very strong cutting edge: Hollow Ground blades will eventually become impossible to sharpen.
Each knife has a perfect join between the handle, bolster and blade - the hygiene requirement of top quality professional knives. The proven high technology material 'POM-C, forms handles which have great resistance to heat, wear and dishwasher detergents. Stellar handles are crafted using solid spun one-piece rivets, spun flat under pressure, which cannot work loose. On some knives the 'heel' of the handle extends below the blade which prevents the use of all of the blade for chopping and dicing - Stellar designs meet chefs' expectations of everyday effective use and safety.
Although Stellar knives are dishwasher safe, we recommend hand washing without soaking and immediate drying and polishing with a soft dry cloth. Regular light use of a Sharpening Steel will maintain the cutting edge, although eventually the blade will have to be resharpened using a Knife Sharpener.
